APPLICATION OF ACOUSTIC AND ELECTROACOUSTIC SPECTROSCOPY IN DAIRY SCIENCE

Abstract

In this work the modern methods of dispersive systems, acoustic and electroacoustic spectroscopy, are presented. Pros and cons of these methods and peculiarities of measurements in such colloids as milk and dairy products are considered. The measurements of attenuation spectra, ultrasound speed and dispersed phase particles size were conducted in milk using spectrometer DT1202. The perspectives of mentioned analytical methods in the dynamic investigation of various processes in milk and dairy products are demonstated. The results of a complex study on milk lactic fermentation process are described.
